A Harbourfront Culinary Journey at Watersedge
As part of a five-day incentive program across Sydney, Laissez-Faire Catering welcomed 500 international guests to Watersedge with a spectacular harbourfront dining experience designed to introduce visitors to Australia’s vibrant food culture.

Drawing on its strong venue relationships, Laissez-Faire Catering secured an exclusive Level 2 buyout of Watersedge at Circular Quay and worked alongside event partners AV1 and Simply Seated to transform the space into an immersive culinary environment overlooking Sydney Harbour.

The evening was designed as a luxury roaming feast, allowing guests to move freely through a series of curated food and beverage experiences while taking in the iconic waterfront setting.

Culinary stations included dramatic chilled seafood towers featuring Yamba prawns, Australian lobster and freshly sliced sashimi prepared by chefs, alongside vibrant noodle market dishes inspired by Asian street food. Roving canapés circulated throughout the venue while guests explored the space.

A highlight of the evening was the Australian native gin bar, where guests discovered local botanicals including finger lime, lemon myrtle and Tasmanian pepperberry paired with premium Australian gins. The experience concluded with a decadent whisky and house-made chocolate bar, creating a memorable finale to the evening.

Delivering the event required extensive planning and coordination to activate multiple food and beverage zones simultaneously while maintaining seamless guest flow across the venue.

The result was a lively, immersive dining experience that celebrated Australian produce while setting the tone for the extraordinary week of events ahead.
