A Met Gala–Inspired Gala Dinner at Carriageworks
A five-day Sydney incentive program hosting 500 international guests concluded with a spectacular gala dinner at Carriageworks, where Laissez-Faire Catering transformed Bay 22–24 into an immersive luxury dining experience inspired by the glamour and elegance of the Met Gala.

From the moment guests arrived, the scale and theatricality of the event was evident. Guests were welcomed with champagne, premium cocktails and Russian caviar while roaming oyster shuckers served freshly opened oysters as part of the arrival experience.

The arrival space in Bay 22 set the tone for the evening before guests moved into the main dining environment revealed through dramatic draping. Inside, the venue had been transformed with spectacular styling and lighting to create an elegant setting for the 500-guest dinner.

Delivering the event required significant operational planning, including the installation of a fully functioning pop-up kitchen within the venue to enable the culinary team to execute a refined three-course plated dinner service.

The menu showcased premium ingredients including CopperTree Farms beef fillet and Glacier 51 Patagonian toothfish, reflecting the high-end dining experience the client envisioned. The evening concluded with a dramatic white chocolate sphere dessert finished with gold accents and filled with blueberry mousse.

With extensive planning, large-scale staffing and seamless coordination with AV1 and Simply Seated, the evening delivered a world-class dining experience and a spectacular finale to the week-long incentive journey.
