9 Sep 2020 Update: 

 

Laissez-faire Catering have implemented an organisation-wide return to work policy specifically adhering to NSW government regulations and requirements regarding COVID-19. This is to protect visitors, clients, staff, suppliers and anyone our organisation comes in contact with as we operate in this new environment.

In addition to our own company policy, we are also undertaking the following steps:

  • Restaurant & Catering Association COVID-19 Hospitality Best Practise Training completed by all staff;
  • Clear and prominent internal and external COVID signage
  • Separate public entry and exit points for our cafes and kiosks
  • Limited seating and contactless payment procedures
  • Managed entry to venues to ensure the correct number of customers is maintained (as per the recommended limits for each re-opening stage)
  • Separate order and collection points for counter service
  • Staggered seating times and fixed sitting times for our eat in venues
  • Room size consideration to meet and still maintain social distancing measures
  • Individually controlled air conditioned function spaces
  • Video conferencing and telephone conferencing solutions
  • Creative menu options and food presentation to reduce possible cross contamination

COVID-19 An Update to our Approach

In line with increasing restrictions and regulations around meeting in public places and the closure of a number of our venue partners, namely the Australian National Maritime Museum and the State Library of New South Wales, Laissez-faire Catering has moved operations to working from home where possible. 

Our café at St Vincent’s Hospital in Darlinghurst remains open.

Once it is deemed safe to return to normal operations, and our venues open, we will provide further updates on our website, social media and in direct communication to our clients.

Laissez-faire gets creative with seaweed at unique conference

Last month Laissez-faire and Australian Technology Park (ATP) hosted a very unique conference – all about seaweed.

The Congress of the International Society for Applied Phycology was on site to showcase seaweed and algae and all its applications. The event ran over four days and included a welcome soiree in the atrium that Laissez-faire was asked to design an exclusive oceanic themed menu for.

Head chef Clinton Brown and his team put their thinking caps on and came up with a delicious and creative cocktail menu that included different types of marine produce.

The savoury canapés included native angais oyster with mermaid’s necklace & green apple foam, waygu, wakame and Asahi pie, salt & pepper ulva calamari, fresh lime and pickled Hana Tsumomata and Moreton Bay Bug tails with spicy Sichuan chili oil.

The dessert got even more creative with surprisingly delicious seaweed macrons and fig & walnut duileasc chocolate truffles to top off the evening.

Laissez-faire hosts amazing Phantom of the Opera themed wedding at the Cell Block

A few pics from the amazing Wedding we hosted a few months back.  The nuptials took place in the courtyard of the Cell block Theatre (this was an old Prison many years ago) and is now a National Art School in Darlinghurst).   

The Ceremony took place in the courtyard surrounded by all the lovely old sandstone blocks, followed by drinks and then an amazing dinner in the cell block with a Phantom of the Opera inspired theme.

Large candelabras twinkled on three long grandeur tables all in white and silver and accompanied by amazing lighting and sound!  The bride and groom even put on a dramatic dance on stage which then transformed to a dance floor into the early hours of the morning - what a night!

Laissez-faire partners with Gold Soiree dinner for a good cause

The inaugural Gold Soiree at Mercedes Tynan was a beautiful evening. Laissez-faire partnered and supported the event that catered to over 250 guests. 

A special menu was designed by our head chef Clinton Brown and was enjoyed by all. 

The Gold Soiree aimed to raise $50,000 for the Sydney Children’s Hospital Foundation to fund an education study for patients who have suffered from cancer.

Due to the fantastic generosity of all guests, this event raised an amazing $80,000, which will make an incredible difference to children like Maria, whose story was heard on the evening, and many more like her.

“On behalf of the 78,000 patients, and their families, who pass through the Hospital's doors each year, thank you for your outstanding support of the Gold Soiree at Mercedes Tynan, and of Sydney Children's Hospital Foundation.” Sydney Children’s Hospital Foundation CEO Leanne Warner said.

The venue has a capacity to seat up to 300 guests, has a harbour side location, water views, a separate entrance (to that of the main museum) and has high curved ceilings; unique to the Australian National Maritime Museum. It will be the perfect Darling Harbour event venue suitable to conferences, product launches, award dinners, trade shows and weddings. Vikings - Beyond the legend - Exhibition Opened on the 19th of September

Last night we had the Grand opening of the Vikings - Beyond the legend exhibition at the Australian National Maritime Museum. With over 500 VIP guests the museum put on a show with dozens of people dressed in authentic Viking costumes recreating a traditional medieval battle to launch the new exhibition.

Hundreds of treasures reveal how they really lived.

Warriors, invaders and plunderers or explorers, traders and farmers? Beyond the myths and legends, what do we really know about the people we call Vikings?

The fascinating world of Vikings is revealed in the international blockbuster Vikings - Beyond the legend - open for a limited season.

This must-see exhibition draws on recent archaeological discoveries and nearly 500 rare artefacts to shed new light on the Viking way of life while challenging stereotypes of Vikings as ferocious, plundering pagans in horned helmets.

Many of the artefacts have never been seen in Australia such as the oldest known Scandinavian crucifix, finely crafted bronze and silver jewellery, exquisite gold and silver pendants, small statuettes of Norse gods, and Viking swords dating from 700-1100AD.

Visitors can also see an eight metre replica of the Viking boat Krampmacken, and step on board the Jorgen Jorgenson - a newly restored reconstruction of the late 9th century Gokstad ship

Jacob’s Creek hosted Australia’s Longest Reserved Table at the Australian Maritime museum with more than 550 people enjoying a long lunch 

Being such the multicultural country, Australia and its people are rich with stories of provenance; whether you’ve come from a different country, state, town or even suburb to Sydney.

In celebration of Sydney’s rich cultural provenance story, Jacob’s Creek and celebrity chef Pete Evans hosted Australia’s Longest Reserve Table on Saturday, 27 July 2013 featuring a long table of hundreds of guests 

The lunch took at the Australian National Maritime Museum guests were invited to prepare and bring a dish that represents their culture and to share their provenance story with hundreds of other food and wine lovers.

With over 80,000 people on the 14km journey from Hyde Park in Sydney's CBD to Bondi. City2Surf is the world's largest run and Sydney's favourite sporting event. Laissez-faire Catering hosted 4 corporate marquees at City 2 Surf 2012. The 14km journey at 40km/h winds....was no picnic, however it was a successful BBQ. 
In addition to our corporate clients, Laissez-faire catering is the proud sponsor for the runners raising funds towards the Children's Hospital of Westmead. It's the third year in a row and we had over 500 participants attending this year. Combined with the 4 marquees Laissez-faire catering hosted over 1,800 runners and guests.
