Laissez-faire is a Sydney based company that began operations in 1989 with a mission to provide excellent service, high quality food and beverages.
Laissez-faire has excellent support infrastructure, including two fully-fitted commercial kitchens to provide off-site food preparation, including a fully mobile service with refrigerated vehicles.
Laissez-faire has expanded in both size and scope, gaining an outstanding reputation for organising and catering at all types of events

Although Laissez-faire is large enough to enjoy some economies of scale, being family-owned and operated, it’s small enough for the owner to be involved on a day to day basis, ensuring high standards in product and service delivery, including professionalism of the staff.

Clinton Brown

EXECUTIVE CHEF CLINTON BROWN

Our talented new executive chef, Clinton Brown, began his hospitality career at Lucio's restaurant in Paddignton, then several hotels, conference, restaurants and event venues, to then become the director of his own catering company.

Clinton brings over 20 years of experience in the food industry, in both front- and back-of-house. Laissez- faire's new menu collection for 2010 is packed with his passion for food, full of diverse, natural flavours and made from the freshest produce.

One of Clinton's talents and we all know how temperamental chefs can be is the calm approach he brings to managing the LF Catering kitchen and maintaining open lines of communication with your front-of-house team.

His ability to keep a cool head and adapt under pressure help to determine the excellent final product we serves to you.

He has overseen all functions from pre production to fruition, menu planning and supervision, and his experience includes corporate functions for up to 5000 for 3 course dinner, 2-3 day conferences of +1000 delegates, to the more casual BBQs style food for events including backstage catering for large music festivals.

CATERER’S LICENCE
Laissez-faire is currently a holder of NSW Caterers Liquor Licence and complies with all provisions of the Liquor Act 1982.
